We've been eating like kings this vacation. Loads of seafood. I saved the claws and bodies from our New England lobster boil (we ate the tails with steamed clams and boiled red potatoes) a few days ago and today I whipped up lobster salad. Sadly, I forgot to snap a picture until the near end of lunch today. You'll need the claws and bodies of at least three lobsters to make lunch for three.
- 2 cups lobster meat broken into small pieces.
- 1/2 cup diced celery
- 1/4 cup minced onion
- 1/4 mayo
- 1/4 tsp. tarragon
- pinch of salt and pepper

MMMmmmm does that lobster salad look really good. I like crab salad so I bet this would really be something I would just sit and eat it all...all of it.
This is indeed a feast. I love lobster when it's served as a salad. This is simple and delicious and that's a combination that's hard to beat.

I LOVE lobster! Unfortunately, it is cost prohibitive here in the Midwest so, I have to settle for special ocassions only:-(

That looks awesome! I all of a sudden few years back developed an allergy to shellfish, but lobster salad was such a favorite, I really miss it, and yours has me drooling :)
